Breakfast Oatmeal Muffins
You know those really busy, crazy, hectic mornings? The mornings you just do not have time to even care about a nutritious and balanced breakfast? The mornings you end up skipping breakfast and then grab the first thing you can get your hands on, devour it and then end up either regretting it and thinking you could have made better and healthier decisions, or even feeling sluggish soon afterwards. We know those mornings all too well as well! 🙂
These oatmeal muffins are the perfect breakfast option when you are on the go, or even when you just have some extra time over a weekend to bake and spoil your Hubby with a delicious breakfast-which I did 🙂
They are super easy to bake, and a real treat! You can top them with any of your favourite topping, I topped these with some blueberries and nuts. Enjoy them with a nice cup of coffee or tea for the perfect breakfast.
INGREDIENTS
- 3 cups of oats
- 2 mashed up bananas
- 2 medium eggs
- 1/3 cup of honey
- 1 cup Greek yogurt
- 1 cup milk
- 1 tsp salt
- 1 tsp cinnamon
- 2 tsp baking soda
- 2 tsp vanilla extract
- favourite toppings such as nuts, fruit
INSTRUCTIONS
Preheat the oven to 180 degrees Celsius. Mix all the ingredients thoroughly and bake for 30 minutes or until cooked and golden brown.
