Lemon & Coconut Protein Balls
Having a sweet tooth can be quite tough! Myself and Hubby absolutely looooove lemon, and literally anything that is lemon flavour – so of course lemon protein balls was a (very) obvious choice for us one Sunday evening when the craving struck! 🙂 This specific recipe is just a slight adaptation from our Espresso Protein Balls recipe (the Espresso Balls also available to buy ready-made from our Product Catalogue). I literally just substituted the ground coffee with lemon zest, added some extra coconut flour, and replaced the milk with lemon juice. This is just such an easy recipe and definitely a winner!Â

Ingredients:

-1 scoop chocolate whey protein ( I used Biogen’s Diet Protein)Â
-1/2 cup coconut flour
-zest of one medium lemon
-1 tablespoon lemon juice ( you can always add more if you love lemon lots like we do)
-1/2 cup almond nut butterÂ
-1/4 cup honeyÂ
-pinch pf saltÂ
-desiccated coconut to roll the protein balls inÂ

Mix all the ingredients together in a mixing bowl, and start rolling into balls. After rolling your protein balls, cover the protein balls with desiccated coconut and store in an airtight container in the fridge. You can store the protein balls for up to 3/4 days 🙂Â
