Guilt Free Pumpkin Cinnamon Pancakes
Growing up, my biggest treat and favourite “comfort food” was always flapjacks/pancakes. For obvious reasons, it is just not advisable to have sugary flapjacks made from flour on a weekly basis (life can be so unfair!), so I had to improvise with a healthier version. I love this recipe because of how simple and fast it is, only 4 ingredients and 10 minutes!
Recipe:
- 1/3 Cup of Finely Mashed Pumpkin
- 2 Tbsp of Rolled Oats (rolled with rolling pin/food processor, really fine)
- 2 whole eggs
- Cinnamon to taste
Directions:
Mix all ingredients together and cook with olive oil in a non-stick pan like you would cook any other flapjacks. The consistency is quite runny, so wait for the bubbles to form and then turn the flapjack. The flapjacks are also quite thin due to their runny consistency, so I always stack a few on top of each other-extra goodness!
Top with some honey and raw crushed almonds/pecans (even almond flakes) and extra cinnamon if you love cinnamon as much as I do 🙂
