The perfect guilt free and nutritious snack!
Pumpkin Spice Balls
This specific recipe was actually a total accident! 🙂 I was busy experimenting in the kitchen one morning, and the recipes I was trying out all had some pumpkin in them. I ended up with almost a full cup of pumpkin left over so I decided to try and make something out of it, together with all the other basic ingredients that were standing around on the kitchen counter. Before I knew it, out came these little delicious balls! We enjoyed them quite a lot and that’s why I really want to share the recipe with everyone. They really are the perfect solution when you have a craving for something sweet! The fact that they are nutritious on top of the yummy part is just an amazing bonus!
Ingredients:
-1/3 cup pumpkin (mashed up)
-1/3 cup oats
-1/3 cup cranberries
1/4 cup chopped almonds
-2 Tbsp honey
-1 tsp vanilla essence
-cinnamon to taste
Directions:
I literally just mixed everything together in a bowl, and once mixed I rolled them into bite sized little balls. They are better served chilled, so I just popped them into the fridge for a few minutes before enjoying them with a nice cup of Rooibos tea.
