Guilt Free and Easy Peasy Chocolate Mug Cake – What more could a girl ask for?
Chocolate Mug Cake
Even though summer is fast approaching, late afternoons and evenings are still quite chilly, and we all know what that means-CRAVINGS! If you are anything like me, colder weather means I’m constantly on the lookout for something sweet (but nutritious and guilt-free as always) to nibble on. The cravings usually make their appearance after dinner, sneaky buggers these cravings. This chocolate mug cake is definitely one of my all favourite treats for these late night cravings. Packed with protein, specifically casein protein, it is actually perfect just before going to bed at night. Casein protein is a slow release protein, working best while you are sleeping for optimal muscle recovery. Anything to help with those sore muscles after an intense session, right?
Ingredients:
-1 Scoop Chocolate Casein Protein (*see below for substitutes)
-1 Egg White
-1 TB coconut flour ( can also use almond flour)
-1 TB cocoa
-1/2 tsp baking powder
-1/4 cup milk of choice
Toppings:
-TB sugar free peanut butter
-A few dark chocolate chips
-Other toppings could include any of your favourites; nuts, coconut flakes, sliced fruits etc 🙂
Directions:
Mix all the ingredients together. Spray your mug with some nonstick spray and add the mixture to the mug. Cover the mug with some plastic wrap and pop into the microwave for 30 seconds to 1 minute ( I went with 45 seconds). The time in the microwave oven will obviously depend on your specific microwave oven, but also whether you want your mug cake to be more moist/ runny or dense. Lastly, add your toppings and enjoy! 🙂
*You could definitely also use whey protein instead of casein protein if you do not have casein protein available at home. We have tried it, and although the final product is not as thick and yummy, it is still really delicious.
