Banana Dark Chocolate Chip Muffins
Whether you are a Fit & Health Conscious Mommy looking for healthy lunchbox & snack ideas for the kiddies, or a working professional, wanting a quick-to-make and waistline friendly snack (that does not taste like cardboard 😉 ) – these Banana Dark Chocolate Chip Muffins are ideal. We always say “fail to prepare, then prepare to fail”, so the biggest key to maintaining your healthy eating habits is to always be prepared with some healthy snacks and treats on hand. These muffins are very easy and also fast to prepare and bake-ideal for a quick Sunday afternoon bake so you can have a healthy and yummy snack for the kiddies (or yourself) on Monday.
INGREDIENTS: (makes 12 Muffins)
-2 Medium Ripe Bananas-Mashed
-2 large Eggs
-1 cup Plain Greek Yogurt
-2 cups finely rolled oats
-1,5 tsp baking powder
-1/2 tsp baking soda
-1/4 cup brown sugar
-1/2 cup dark chocolate chips
METHOD:
Mix all the ingredients and add the dark chocolate chips last. Bake in the oven for 20-25 minutes on 180 degrees Celsius or until golden brown 🙂
Because these muffins don’t contain any preservatives, it is best if you eat (or devour 😉 ) them within 3-4 days-they of course the best during the first two days after baking. Enjoy them as a post-workout snack to re-fuel after an intense workout, enjoy two muffins for breakfast with a cup of coffee (A.K.A a cup of pure love), or pop them into your lunchbox as a healthy snack when you are on-the-go!
